If you're willing to ditch the white wool, you could use the quartz blocks. There are quartz slabs and stairs that may make smoother curves. As for the shape of the sail, perhaps go for a bowtie shape. If you do this, minor adjustments like pushing out the middle and making it taller would make it look more like a sail.

Since I've been working on organic builds, many of which require curves, I'd suggest this: Make the builds bigger. The smaller the ship, the harder it is to pull off a sail that actually looks curved.

Well the problem with that is that it would look out of place, I'll try to make some more ships, I think if i just keep building ships I can kinda feel how to make sails.

Alright, if you want to change that build in particular, try making it less geometric. The way you have it set up currently, there are lots of straight lines everywhere. If you want to create the illusion of curved space in Minecraft, you need to alter that. For instance, take a look at the two areas I've highlighted:

Both are made of blocks that give the sail a blocky quality. They look like lines, so they don't end up looking like the curved space you need. Try messing with those areas a little bit and see if you can get what you want out of it.

There are some sails that sofa and I worked on at my monopoly map that are decent if you want to look at some curves. To get there, go to my house, find the one sign on the upper level which will take you to my old house (its the only sign on the upper level), and then take the warp sign called "ship".
